Beet Salad with Curry Dressing
This colorful beet salad can be made with either red or golden beets. It’s a simple, tasty salad that pairs well with eggs, cheese, rice or other grains, or hot crusty sourdough bread. Lightly toasting the walnuts really enhances their flavor.

Beet Salad
  • 3 large beetscooked, peeled and chopped into bite-size pieces
  • 1/2 cup walnutslightly toasted if desired
  • fresh herbschives, dill, parsley, cilantro, etc.
  1. Whisk all dressing ingredients together in a bowl. Transfer to a container and set aside.
  2. Make the beet salad: Place beets and walnuts in a serving bowl.
  3. Add as much dressing as desired. Any leftovers can be stored in the refrigerator.
  4. Toss the salad to coat the beets. Garnish with any fresh herbs desired.
