Carrot, Nut and Raisin Raita
Serve this delicious, cooling raita as side to biryani, parathas, or any spicy Indian meal. Enjoy as a snack with spicy chips and finger foods, too!
Ingredients

Greek yogurt
plain

orange juice

orange zest
grated
raw honey
optional, to taste

pinches
green cardamom powder
or to taste

carrot(s)
peeled, grated or julienned
1/4
cup
Monukka Raisins
or Hunza Raisins
1/4
cup
cashews
or peanuts, chopped
cilantro
chopped, to garnish
Instructions
In a mixing bowl, whisk the yogurt until smooth.
Add orange juice, orange zest, honey (if using), and cardamom. Mix well.
Stir in carrots, raisins, and nuts. Taste and adjust seasonings as desired. Serve at room temperature or chilled, garnished with cilantro.
