Carrot, Nut and Raisin Raita
Serve this delicious, cooling raita as side to biryani, parathas, or any spicy Indian meal. Enjoy as a snack with spicy chips and finger foods, too!
Ingredients
  • 2cups Greek yogurtplain
  • 2 Tbsp orange juice
  • 1 tsp orange zestgrated
  • raw honeyoptional, to taste
  • 1-2pinches green cardamom powderor to taste
  • 1cup carrot(s)peeled, grated or julienned
  • 1/4cup Monukka Raisinsor Hunza Raisins
  • 1/4 cup cashewsor peanuts, chopped
  • cilantrochopped, to garnish
Instructions
  1. In a mixing bowl, whisk the yogurt until smooth.
  2. Add orange juice, orange zest, honey (if using), and cardamom. Mix well.
  3. Stir in carrots, raisins, and nuts. Taste and adjust seasonings as desired. Serve at room temperature or chilled, garnished with cilantro.
