Cucumber, Carrot, and Tomato Raita
Raita is a classic Indian favorite made from yogurt, cucumbers, and cumin. There are endless variations that feature additional vegetables and spices. It’s a delicious, cooling addition to a spicy meal, dish, or snack.
Ingredients
  • 2cups yogurtplain
  • 1small seedless cucumber(Persian cucumber), grated
  • 1cup carrot(s)peeled, grated or chopped
  • 1/2small tomatofinely chopped
  • 1/4cup scallionschopped (optional)
  • cuminground, to taste
  • Himalayan pink saltto taste
  • black pepperfreshly ground, to taste
  • cayenne pepperto taste (optional)
  • cilantochopped
  • mintfresh leaves (optional)
Instructions
  1. In a mixing bowl, whisk the yogurt until smooth.
  2. Add cucumbers, tomato, carrots and scallions.
  3. Season with cumin, salt, pepper and cayenne to personal taste.
  4. Serve garnished with cilantro and/or fresh mint leaves
