Ghee Roasted Chickpeas
These make a great snack or a fun addition to a meal. Try them over pizza, stuffed into pita, or served over rice or quinoa with a side of veggies.

freshly cooked or canned, rinsed and drained

or Garlic Ghee

kashmiri red chili powder

turmeric powder
salt
to taste
black pepper
freshly ground, to taste
cilantro
garnish, optional
lemon juice
freshly squeezed, optional
Instructions
Preheat oven to 400 degrees F. Pat chickpeas dry with a paper towel — the drier they are, the crispier they’ll get. Set aside.
Melt ghee in a medium saucepan. Stir in cumin, coriander, Kashmiri red chili powder, turmeric, salt, and pepper.
Add chickpeas to spiced ghee, gently tossing until well-coated.
Spread chickpeas in a single layer on a baking sheet. Roast for 25–30 minutes, shaking the pan halfway through, until golden and crispy.
Serve warm, sprinkled with fresh cilantro or a dash of lemon juice if desired.
