Indian-Spiced Chicken with Cashew Nuts
Here’s a simple, aromatic and delicious recipe you’ll return to often. Feel free to experiment with different kinds of protein, including shrimp, tofu and legumes such as garbanzo beans or lentils.

coconut milk
brown sugar

lime juice

cilantro
freshly chopped
Instructions
Heat ghee in a skillet. Sauté onion and bell pepper with cashew nuts for a few minutes, or until onion softens.
Add the chicken and spices, salt and pepper, cooking and stirring until chicken is browned or cooked on all sides.
Add the coconut milk; cover and simmer, stirring occasionally, until chicken has cooked through, about 5 minutes or so.
Taste; adjust spices, and if desired, add brown sugar (this can help to balance the flavors) along with a little lime juice.
Garnish with cilantro. Serve immediately with basmati rice and/or any bread of choice, and a leafy green salad, if desired.
