Italian Style Zucchini Red Pepper Sauté
This colorful, tasty vegetable recipe is quick and yummy. The addition of Italian ghee and Italian Seasoning made it a great side dish for an Italian or Mediterranean-style meal. If you don’t have, or can’t find Italian Seasoning, simply add a combination of any of the following: basil, oregano rosemary, thyme, and marjoram or tarragon.

  1. Melt a lump of ghee in a saucepan over medium-high heat. Add peppers and zucchini. Stir to coat with ghee.
  2. Add Italian seasoning, stirring often until veggies are cooked to your liking.
  3. Season with salt and pepper. Add cheese if desired.
