Leafy Green Salad with Vegan Ranch
For variety and good nutrition, choose an assortment of leafy lettuce greens. Add herbs such as chives, parsley, basil or mint, if desired. Red radish adds flavor and color and they’re easy to find. However, add any exotic radishes (purple, daikon, watermelon, etc.) if you find them.

  • 8cups leafy lettuce greensof choice
  • 1cup red radishesthinly sliced
Vegan Ranch
  • 1cup vegan mayonnaise
  • 1/4cup coconut-milk yogurtor favorite plain non-dairy yogurt
  • 1/4cup filtered water
  • 2Tbsp lemon juicefreshly squeezed
  • 1 Tbsp fresh chivesminced
  • 1tsp Himalayan pink saltor to taste
  • 1tsp oreganodried
  • 1/2tsp dried granulated onionor onion powder
  • 1/2-1tsp vegan Worcestershire sauceoptional
  • black pepperfreshly ground, to taste
  • red pepper flakesor cayenne pepper, to taste, optional
Instructions
  1. Toss leafy lettuce greens with radishes. Drizzle with Vegan Ranch.
