Put almonds, moringa, cinnamon, cardamom, ginger and salt in a food processor. Pulse to the consistency of coarse meal.
Add ghee and dates. Process until the mixture comes together, stopping and scraping down sides of processor if needed.
Transfer to a bowl. Form walnut-sized balls between your palms. Roll in sliced almonds, if desired. Place each ball on a parchment or wax paper-lined baking sheet or plate.
Chill until cold and firm. Store in an air-tight container, preferably in the refrigerator.
