No-Bake Cocoa Natto Cookie Bites
Many people are aware of the tremendous benefits of natto, a Japanese staple that, for many Westerners, can be a bit off-putting. Ingredients
  • 4 tsp freeze-dried nattoreconstituted in 1 Tbsp water
  • 6Tbsp nut butterpeanut, almond, etc.
  • 1/4 cup raw honey
  • 1/4cup cacao nibs
  • 1/4cup raisins
  • 1/4cup nutsor seeds of choice, finely chopped or ground
  • 2Tbsp cocoa powderunsweetened
  • 2Tbsp tahini
  • 2Tbsp toasted sesame seedswhite or black
  • 1/2tsp Himalayan pink salt
  • organic powdered sugarfor garnish, optional
  • toasted sesame seedsfor rolling, optional
Instructions
  1. On a cutting board, coarsely chop the reconstituted natto; set aside.
  2. In the bowl of a food processor, combine nut butter, honey, cacao nibs, raisins, chopped or ground nuts, cocoa powder, tahini, and 2Tbsp sesame seeds and salt. Pulse several times until well-combined.
  3. Add natto, pulsing and blending until completely incorporated.
  4. Scoop out about a tablespoon of the mixture for each cookie and form into balls. Flatten slightly into rounded cookie shapes. Store in an air-tight container. If desired, dip the top side of each cookie into additional sesame seeds or sprinkle with powdered sugar.
  5. Cover and store in the refrigerator for up to 2 weeks.
