Ricotta Pancakes in Cardamom Saffron Syrup
Malpua is an authentic Indian Dessert made with ricotta which is rich and perfect for those with a sweet tooth. This recipe features pistachios and saffron in a luscious syrup.
  • 1cup sugar
  • 1/4tsp saffron
  • 3 cardamom, greenpods
  • 1cup ricotta cheesedrained in a sieve overnight
  • 1cup floursifted
  • 1/4cup Ghee
  • 1/4cup pistachioschopped
  1. Simmer sugar, saffron, cardamom, and 1 cup water in a 1-qt. saucepan over medium heat for 12 minutes.
  2. Mix ricotta, flour, and 3⁄4 cup water in a bowl to make a batter.
  3. Heat ghee in a 12″ nonstick skillet over medium-high heat.
  4. Working in batches, spoon 2-tbsp. portions of batter into skillet, and fry until golden, 2-3 minutes.
  5. Arrange pancakes in a shallow dish with sides.
  6. Pour cardamom syrup over top.
  7. Sprinkle with pistachios.
  8. Let soak for 5 minutes before serving.
