Roasted Broccoli with Curry and Garam Masala
This is a super easy recipe that combines the flavors of curry powder with garam masala. When mixed with oil and garlic, it makes a delicious coating for a variety of roasted vegetables. For an added treat, serve with a light drizzle of tamarind date chutney.

Ingredients
  • 4 cups (260g) broccoli florets
  • 2Tbsp (30g) extra virgin olive oil
  • 1-3 cloves garlicminced
  • curry powderto taste
  • garam masalato taste
  • salt
  • black pepperground
Instructions
  1. Preheat oven to 400 degrees F.
  2. In a mixing bowl, toss broccoli with olive oil and any amount of garlic, spices, salt and pepper desired.
  3. Arrange broccoli on a parchment-lined or stainless steel baking sheet. Roast for 12-17 minutes or until broccoli is tender and done to your liking.
