Tomato Bun Sloppy Joes with Ancho-Spiced Butternut Squash

Ingredients
  • 1portion ground beefsee “ground beef base” recipe
  • 3tbsp tomato paste
  • 1/2tsp thymedried, crushed
  • 1cup apple cider
  • 1cup broth(beef)
  • 2tbsp dijon mustard
  • 2 tomatoesmedium size, sliced into 1/2 inch cuts
  • parsleyfreshly chopped
  • 1portion butternut squashsee recipe “ancho-spiced roasted butternut squash”
Instructions
  1. In large pan, add ground beef base, thyme and tomato paste, and cook evenly.
  2. Add apple cider, mustard, and beef broth.
  3. Bring to a simmer, cover, reduce heat, simmer for 20 minutes, or until it reaches a desired thickness.
  4. On a plate, lay out tomato slices, then cover with the mix. Garnish with parsley.
  5. Served with ancho-spiced roasted butternut squash to complete the dish. (See recipe.)
