Ingredients
  • 4cups brothWhole30 compliant chicken
  • 1tsp Red Boat fish sauceplus more as needed
  • 4 shiitake mushroomsthinly sliced
  • 1 carrot(s)thinly sliced into coins
  • 3cups bok choythinky sliced
  • 2cups chickenthighs, diced, cooked
  • Himalayan pink salt
  • 1/2tsp sesame oiltoasted
  • 1/4cup green onionminced
Instructions
  1. Heat a medium size saucepan on high, and add broth and fish sauce.
  2. Bring to a boil. Then, add mushrooms and carrot.
  3. Reduce heat and simmer until carrots are tender, but not mushy.
  4. Add bok choy and diced chicken and continue to simmer for about 10 minutes.
  5. Take pan off heat and season to personal preference.
  6. To serve, add sesame oil and green onions, then ladle into bowls.
