Pear Salad with Roasted Walnuts and Mango-Primal Dressing
Enjoy this salad all year long by going with the seasons. For example, in summer, consider using peaches and sunflower seeds in place of pears and walnuts which are better suited for fall and winter. This should yield 4 servings.
Ingredients
Salad
  • 8cups salad greens
  • 1/2cup radicchiochopped
  • 1 pearfirm, such as Bosc, chopped or sliced
  • 4 red radisheshalved and sliced
  • red onionscut into thin rings, optional
Zesty Mango Dressing
  • 1/4cup Alphonso Mango Puree
  • 1/4cup PrimalOil
  • 2Tbsp extra virgin olive oil
  • 2-3tsp lemon juicefreshly squeezed
  • 2tsp white wine vinegar
  • 1tsp prepared mustardDijon or any favorite
  • dried parsley
  • salt
  • black pepperground
Instructions
  1. Put salad ingredients in a serving bowl.
  2. Separately, blend dressing ingredients with a wire whisk. Adjust seasonings to taste.
  3. Pour any amount desired amount over salad, tossing to coat.
