Instructions
Heat 2 TBSP Pure Indian Foods Italian Ghee in a cast iron pan and sauté chopped scallions, diced peppers, diced tomato, cubed meatballs, and garlic.
In a medium bowl, eggs with 1 TBSP melted Garlic Ghee, and shredded cheese.
Pour over vegetable mixture and heat through halfway.
To cook top, place in oven at 525°F on broil for 5 minutes or until golden on top.
Top with fresh avocado
, salsa, chives, cilantro, red pepper flakes, Sriracha or really anything you desire. 🙂
