Heat milk and cream in a small saucepan until it just starts to simmer. Remove from heat.
Place 1/4 cup of the warm milk mixture in a medium bowl with the gelatin and mix until smooth, then add the rest of the milk.
Add yogurt, honey, and cardamom. Whisk until well blended together. Pour into 8- 10 (6oz) glass jars and place the lids on.
Set the Instant Pot to the Yogurt setting and place a trivet in the inner cooking bowl. Place the jars on the trivet. Set the timer for 8 hours.
When completed, remove jars and sample. If desired, adjust flavor with more jaggery or honey.
Place the jars in the refrigerator to chill and let the gelatin set for 6 hours.
Eat by itself or use in various recipes, such as with chicken or in a lassi.
