Open-Faced Cucumber Cream Cheese Sandwiches
This simple recipe is perfect for a fast, healthy lunch or snack. We use cream cheese but feel free to substitute with any favorite cheese or a non-dairy substitute such as almond “cream cheese” or hummus. There are no set amounts for ingredients; use as much you desire.

Ingredients
  • 4slices breadwhole grain, good quality
  • cream cheeseorganic
  • cucumber(s)thinly sliced
  • pomegranate arils
  • pumpkin seedsroasted, if desired
  • black sesame seeds
  • dillfresh, or herb of choice
  • Alphonso Mango Vinaigretteor salad dressing of choice (optional)
Instructions
  1. Toast the bread if desired. Spread with cream cheese.
  2. Place cucumbers decoratively over the top. Sprinkle with pomegranate arils, pumpkin seeds, black sesame seeds and fresh dill leaves.
  3. If desired, serve alongside salad dressing for drizzling over the top.
