Refreshing Tamarind Tea
  • 4cups filtered water
  • 1/8cup jaggery (grated)or 1/4 cup of light brown sugar or 1/8 cup honey
  • 1tsp gingerpowder
  • 2TBSP tamarind paste
  • 2TBSP lemon juiceor lime juice
  • mint leavesto garnish
  1. Bring water to a boil.
  2. Remove from heat, then add jaggery, ginger, and tamarind paste and whisk well.
  3. Cool for 5 minutes, then add lemon juice.
  4. Strain through a coffee filter into a pitcher, and refrigerate for at least 2 hours.
  5. Serve chilled with fresh mint leaves.
