Mexican Mole Sauce
Ingredients
  • 1cup onion(s)chopped
  • 3large garliccloves, chopped
  • 2large roma tomatoeshalved
  • 1/4cup raisins
  • 1/2cup peanutsdry roasted
  • 1tsp sugar
  • 2-1/2tsp chili powder
  • 1/4tsp cinnamon
  • 3 cloveswhole
  • 1/8tsp sesame seeds
  • 1/4cup almonds
  • 1/2 ripe plantainpeeled
  • 3/4tsp cuminground
  • 1/4tsp corianderground
  • 1/8tsp Himalayan pink salt
  • 1oz unsweetened chocolate
Instructions
  1. Saute onion and garlic in ghee until fragrant.
  2. Add all ingredients to food processor and blend until smooth and pour-able.
  3. Return to stove-top and simmer for 5 minutes, or until hot, before serving.
  4. Spoon over meat or enchiladas.
