- 3-4 cardamom, green pods
- 6-8 peppercorns, black
- 4 cloves whole
- 2 inch cinnamon whole stick
- 1 tbsp Ghee
- 1/2 tsp cumin whole
- 1 cup onion, red thinly sliced
- 1 tsp Himalayan pink salt
- 1 cup basmati rice rinsed and drained
- 1 1/4 cups filtered water

Instructions
- Combine peppercorns, cardamom pods, cloves, and cinnamon in a muslin bag or a spice infuser, and slightly crush.
- Select sauté on Instant Pot and set on high heat. When ready, add ghee and heat until shiny. Add cumin seed and wait 30 seconds. You'll hear a popping sound.
- Combine sliced onions, and salt. Stir as you go, until the outer linings of the onions are browned.
- Combine the mix with the rice until coated evenly by ghee. Then, combine the water and spices you crushed previously.
- After locking the lid, manually adjust to high pressure and cook for 5 minutes.
- When done, let sit for 10 minutes then release any remaining pressure rapidly.
- Open the top and serve.
