Indian-Spiced Chicken with Cashew Nuts

  • 1 tbsp Garlic Ghee or Original Ghee
  • 1 sweet onion chopped
  • 1 red bell pepper or any color pepper desired
  • 1/3 cup cashews
  • 1 pound chicken breast boneless, skinless, cut into bite-size pieces
  • 2 tsp garam masala ground
  • 1/2 tsp turmeric
  • 1/2 tsp dried ginger powder
  • 1/2 tsp cumin ground
  • 1/2 tsp coriander ground
  • Pinch saffron
  • cayenne pepper
  • salt
  • black pepper
  • 1/2 cup coconut milk
  • brown sugar optional
  • lime juice optional
  • cilantro freshly chopped

Instructions
  1. Heat ghee in a skillet. Sauté onion and bell pepper with cashew nuts for a few minutes, or until onion softens.
  2. Add the chicken and spices, salt and pepper, cooking and stirring until chicken is browned or cooked on all sides.
  3. Add the coconut milk; cover and simmer, stirring occasionally, until chicken has cooked through, about 5 minutes or so.
  4. Taste; adjust spices, and if desired, add brown sugar (this can help to balance the flavors) along with a little lime juice.
  5. Garnish with cilantro. Serve immediately with basmati rice and/or any bread of choice, and a leafy green salad, if desired.
