This colorful, tasty vegetable recipe is quick and yummy. The addition of Italian ghee and Italian Seasoning made it a great side dish for an Italian or Mediterranean-style meal. If you don't have, or can't find Italian Seasoning, simply add a combination of any of the following: basil, oregano rosemary, thyme, and marjoram or tarragon.

- 1 large zucchini chopped
- 1-2 medium red bell pepper chopped
- 1 dollop Italian Ghee
- Italian seasoning
- Himalayan pink salt
- black peppercorns freshly ground
- Parmesan cheese or Romano, optional

Instructions
- Melt a lump of ghee in a saucepan over medium-high heat. Add peppers and zucchini. Stir to coat with ghee.
- Add Italian seasoning, stirring often until veggies are cooked to your liking.
- Season with salt and pepper. Add cheese if desired.
