These easy-to-make cookies have a yummy chai-like spice flavor! They're made with whole grain einkorn flour but white einkorn flour will do nicely. Although we used mini chocolate chips, feel free to substitute as much as you like of your favorite kind. This recipe will yield about 16-18 cookies.

- 1 cup (150g) whole wheat einkorn flour
- 1/4 tsp (1.5g) baking soda
- 1/4 tsp (1.5g) salt
- 1 tsp (1g) baking powder
- 1/4 tsp (0.7g) green cardamom powder
- 1/4 tsp (0.6g) dried ginger powder
- 1/4 tsp (0.5g) Ceylon cinnamon
- 1/8 tsp (0.3g) nutmeg freshly grated or ground
- 1/3 cup (70g) brown sugar packed
- 1/4 cup (56g) butter softened
- 1 tsp (5g) vanilla extract
- 2 egg(s)
- 6 Tbsp (70g) mini chocolate chips semi-sweet

Instructions
- Preheat oven to 325 degrees F. Line a cookie sheet with parchment paper and set aside.
- Whisk flour with baking soda, baking powder, spices and salt. Set aside.
- Separately, whisk butter with brown sugar, eggs and vanilla until well-combined.
- Gradually add flour mixture, stirring well after each addition.
- Fold in chocolate chips.
- Drop by rounded teaspoonful onto baking sheet, leaving 1.5 - 2 inches between cookies.
- Bake 10-12 minutes; cool on cookie sheet a few minutes before transferring to a wire rack to finish cooling.
