These make a great snack or a fun addition to a meal. Try them over pizza, stuffed into pita, or served over rice or quinoa with a side of veggies.
Leafy Green Salad with Vegan Ranch
For variety and good nutrition, choose an assortment of leafy lettuce greens. Add herbs such as chives, parsley, basil or mint, if desired. Red radish adds flavor and color and they’re easy to find. However, add any exotic radishes (purple, daikon, watermelon, etc.) if you find them.
Vegan Ranch Dressing
This is a plant-based, non-dairy take on a traditional favorite. We’ve opted for plain coconut milk yogurt mixed with vegan mayonnaise made with avocado oil. Feel free to add fresh herbs and skip the dried if preferred. If you’ve got some on hand, the vegan Worcestershire sauce adds a nice little burst of flavor! Use this dressing on leafy green salads, drizzled over tomato slices, and as a dip for sweet potato fries and onion rings.

Curry-Roasted Root Vegetables with Marinara and Ghee
This colorful, delicious recipe uses a variety of naturally sweet root vegetables seasoned with ghee, curry, cayenne and a favorite marinara sauce. The vegetables are roasted in a hot oven to golden perfection and topped off with a sprinkle of parsley for the final touch. Vegetables we used include onions, carrots, rutabaga, golden beets and daikon radish. Add spices and parsley to personal taste.
Roasted Broccoli with Curry and Garam Masala
This is a super easy recipe that combines the flavors of curry powder with garam masala. When mixed with oil and garlic, it makes a delicious coating for a variety of roasted vegetables. For an added treat, serve with a light drizzle of tamarind date chutney.
