Combine the following:
3 cups of cooked quinoa
1 cup halved grape or cherry tomatoes
1/2 chopped red onion
1-2 chopped scallions
1/2 chopped red pepper
1 cup chopped cucumber
¼ cup chopped parsley
¼ cup chopped basil
¼ cup olive oil (or PRIMALOIL)
3-5 TBSP fresh lemon juice
Salt & Pepper to taste
Marinate at room temperature for an hour or more, if possible, before serving.
