Open-Faced Cucumber Cream Cheese Sandwiches
This simple recipe is perfect for a fast, healthy lunch or snack. We use cream cheese but feel free to substitute with any favorite cheese or a non-dairy substitute such as almond “cream cheese” or hummus. There are no set amounts for ingredients; use as much you desire.

  • 4 slices bread whole grain, good quality
  • cream cheese organic
  • cucumber(s) thinly sliced
  • pomegranate arils
  • pumpkin seeds roasted, if desired
  • black sesame seeds
  • dill fresh, or herb of choice
  • Alphonso Mango Vinaigrette or salad dressing of choice (optional)

Instructions
  1. Toast the bread if desired. Spread with cream cheese.
  2. Place cucumbers decoratively over the top. Sprinkle with pomegranate arils, pumpkin seeds, black sesame seeds and fresh dill leaves.
  3. If desired, serve alongside salad dressing for drizzling over the top.
