Ingredients
- 1 tbsp Garlic Ghee or Original Ghee
- 1 sweet onion chopped
- 1 red bell pepper or any color pepper desired
- 1/3 cup cashews
- 1 pound chicken breast boneless, skinless, cut into bite-size pieces
- 2 tsp garam masala ground
- 1/2 tsp turmeric
- 1/2 tsp dried ginger powder
- 1/2 tsp cumin ground
- 1/2 tsp coriander ground
- Pinch saffron
- cayenne pepper
- salt
- black pepper
- 1/2 cup coconut milk
- brown sugar optional
- lime juice optional
- cilantro freshly chopped

Instructions
- Heat ghee in a skillet. Sauté onion and bell pepper with cashew nuts for a few minutes, or until onion softens.
- Add the chicken and spices, salt and pepper, cooking and stirring until chicken is browned or cooked on all sides.
- Add the coconut milk; cover and simmer, stirring occasionally, until chicken has cooked through, about 5 minutes or so.
- Taste; adjust spices, and if desired, add brown sugar (this can help to balance the flavors) along with a little lime juice.
- Garnish with cilantro. Serve immediately with basmati rice and/or any bread of choice, and a leafy green salad, if desired.
