This simple recipe is perfect for a fast, healthy lunch or snack. We use cream cheese but feel free to substitute with any favorite cheese or a non-dairy substitute such as almond “cream cheese” or hummus. There are no set amounts for ingredients; use as much you desire.

    Ingredients
    
                - 4 slices bread whole grain, good quality
 - cream cheese organic
 - cucumber(s) thinly sliced
 - pomegranate arils
 - pumpkin seeds roasted, if desired
 - black sesame seeds
 - dill fresh, or herb of choice
 - Alphonso Mango Vinaigrette or salad dressing of choice (optional)

    Instructions
    
                - Toast the bread if desired. Spread with cream cheese.
 - Place cucumbers decoratively over the top. Sprinkle with pomegranate arils, pumpkin seeds, black sesame seeds and fresh dill leaves.
 - If desired, serve alongside salad dressing for drizzling over the top.
