What a combo! Red skinned potatoes and garlic ghee - so delicious! You can make a meal off of these with a side of salad and/or green vegetables, or add some protein of choice - chicken, salmon, beef, or pork chops. Either way, you'll love these yummy taters!

Ingredients
- 2 pounds red-skinned potatoes scrubbed and cut into quarters (skin on)
- 3 Tbsp Garlic Ghee
- 1/2 cup milk warmed, more or less to taste
- salt as needed
- black pepper freshly ground, to taste
- parsley or chives chopped, for garnish, optional

Instructions
- Place the potatoes in a large pot. Cover with cold water by 1–2 inches. Add 1 tsp salt, and bring to a boil.
- Reduce heat to a simmer and cook for 15–20 minutes, or until potatoes are fork-tender.
- Drain the potatoes completely, letting excess steam escape for 1–2 minutes (this keeps the mash fluffy, not watery).
- Return potatoes to the warm pot. Add ghee and mash until smooth but still a little rustic.
- Gradually add the warm milk, mashing or stirring to desired creaminess. Season with salt and pepper to taste.
- Garnish, if desired, with parsley or chives
