This is a super easy recipe that combines the flavors of curry powder with garam masala. When mixed with oil and garlic, it makes a delicious coating for a variety of roasted vegetables. For an added treat, serve with a light drizzle of tamarind date chutney.

- 4 cups (260g) broccoli florets
- 2 Tbsp (30g) extra virgin olive oil
- 1-3 cloves garlic minced
- curry powder to taste
- garam masala to taste
- salt
- black pepper ground

Instructions
- Preheat oven to 400 degrees F.
- In a mixing bowl, toss broccoli with olive oil and any amount of garlic, spices, salt and pepper desired.
- Arrange broccoli on a parchment-lined or stainless steel baking sheet. Roast for 12-17 minutes or until broccoli is tender and done to your liking.
