Ingredients
- 2 1/2 tbsp Ghee
- 1 lb beef ground
- 2 cups onion(s) chopped
- 28 oz tomatoes fire-roasted diced and undrained
- 1 medium serrano chili seeded and finely chopped
- 1 large sweet potatoes peeled and cut into 3/4 inch chunks
- 1 cup red bell pepper chopped
- 2 tbsp chili powder
- 1/2 tsp chipotle chili pepper ground
- 1/2 tsp Himalayan pink salt
- cilantro chopped
- green onion chopped

Instructions
- In large pot, heat ghee on medium heat.
- Add serrano, ground beef, onion, and cook, stirring and breaking up the meat until meat is browned.
- Stir in the tomato (un-drained) with sweet potato, broth, bell pepper, chili powder, chipotle, and salt. Bring to a boil.
- When simmering, reduce to low heat, cover, and simmer, stirring infrequently for 20-25 minutes or until potatoes are soft.
- Serve garnished with cilantro and/or green onions.
