  • 1 lb beef ground
  • 2 cups onion(s) chopped
  • 28 oz tomatoes fire-roasted diced and undrained
  • 1 medium serrano chili seeded and finely chopped
  • 1 large sweet potatoes peeled and cut into 3/4 inch chunks
  • 1 cup red bell pepper chopped
  • 2 tbsp chili powder
  • 1/2 tsp chipotle chili pepper ground
  • 1/2 tsp Himalayan pink salt
  • cilantro chopped

Instructions
  1. In large pot, heat ghee on medium heat.
  2. Add serrano, ground beef, onion, and cook, stirring and breaking up the meat until meat is browned.
  3. Stir in the tomato (un-drained) with sweet potato, broth, bell pepper, chili powder, chipotle, and salt. Bring to a boil.
  4. When simmering, reduce to low heat, cover, and simmer, stirring infrequently for 20-25 minutes or until potatoes are soft.
  5. Serve garnished with cilantro and/or green onions.
