Ingredients
- 1.5 cups chickpeas freshly cooked or canned, rinsed and drained
- 2 Tbsp Ghee or Garlic Ghee
- 1 tsp coriander ground
- 1/2 tsp cumin ground
- 1/2 tsp kashmiri red chili powder
- 1/4 tsp turmeric powder
- salt to taste
- black pepper freshly ground, to taste
- cilantro garnish, optional
- lemon juice freshly squeezed, optional

Instructions
- Preheat oven to 400 degrees F. Pat chickpeas dry with a paper towel — the drier they are, the crispier they’ll get. Set aside.
- Melt ghee in a medium saucepan. Stir in cumin, coriander, Kashmiri red chili powder, turmeric, salt, and pepper.
- Add chickpeas to spiced ghee, gently tossing until well-coated.
- Spread chickpeas in a single layer on a baking sheet. Roast for 25–30 minutes, shaking the pan halfway through, until golden and crispy.
- Serve warm, sprinkled with fresh cilantro or a dash of lemon juice if desired.
