Ingredients
- 2 cups yogurt plain
- 1 small seedless cucumber (Persian cucumber), grated
- 1 cup carrot(s) peeled, grated or chopped
- 1/2 small tomato finely chopped
- 1/4 cup scallions chopped (optional)
- cumin ground, to taste
- Himalayan pink salt to taste
- black pepper freshly ground, to taste
- cayenne pepper to taste (optional)
- cilanto chopped
- mint fresh leaves (optional)

Instructions
- In a mixing bowl, whisk the yogurt until smooth.
- Add cucumbers, tomato, carrots and scallions.
- Season with cumin, salt, pepper and cayenne to personal taste.
- Serve garnished with cilantro and/or fresh mint leaves
