Ingredients
- 1 tsp Ghee
- 1/2 tsp cumin seeds
- 1/4 tsp fennel seeds
- 1/2 tsp ginger ground
- 1/4 tsp garam masala
- 1/4 tsp cayenne
- 1/4 tsp asafoetida (hing)
- 1 cup filtered water
- 3/4 cup jaggery powder or grated jaggery
- 1-1/2 TBSP tamarind paste

Instructions
- Heat ghee in a medium sauce pan, and add spices.
- Bloom spices for 2 minutes or until aromatic.
- Add water, jaggery, and tamarind paste, and stir.
- Simmer on low for 15-20 minutes. Sauce will be thin, but will thicken as it cools.
