Carrot salads are a popular dish throughout India. The spices in this are heated in the ghee so the flavor can be released into the dressing. For more flavor allow to sit for about a half hour before serving.

Ingredients
- 1 Tbsp Ghee
- 1/4 tsp brown mustard seeds
- 1/4 tsp cumin seeds
- pinch turmeric ground
- 1/4 tsp Himalayan pink salt
- 1/4 tsp jaggery (grated)
- 1 1/2 Tbsp lemon juice
- 1 lbs carrot(s) grated
- cilantro for garnish

Instructions
- Heat ghee in a small pan over medium heat, add mustard and cumin seeds, then cover and shake pan until you hear the seeds start popping.
- Add turmeric, salt and jaggery, then remove the pan from the heat and let cool for 5 minutes.
- Mix in lemon juice, then toss carrot through.
- Cover and let sit for 30 minutes. Garnish with cilantro leaves.
