Tomato Bun Sloppy Joes with Ancho-Spiced Butternut Squash

Ingredients
- 1 portion ground beef see "ground beef base" recipe
- 3 tbsp tomato paste
- 1/2 tsp thyme dried, crushed
- 1 cup apple cider
- 1 cup broth (beef)
- 2 tbsp dijon mustard
- 2 tomatoes medium size, sliced into 1/2 inch cuts
- parsley freshly chopped
- 1 portion butternut squash see recipe "ancho-spiced roasted butternut squash"

Instructions
In large pan, add ground beef base, thyme and tomato paste, and cook evenly.
Add apple cider, mustard, and beef broth.
Bring to a simmer, cover, reduce heat, simmer for 20 minutes, or until it reaches a desired thickness.
On a plate, lay out tomato slices, then cover with the mix. Garnish with parsley.
Served with ancho-spiced roasted butternut squash to complete the dish. (See recipe.)
