- 345g (3 cups) rolled oats Old fashioned
- 30g (1/4 cup) whole grain flour wheat, spelt or gluten free
- 60g (1/2 cup) Husked Watermelon Seeds or any favorite chopped nuts or seeds
- 1g (1/2 tsp) green cardamom powder
- 1.2g (1/2 tsp) Ceylon cinnamon
- 1.2g (1/2 tsp) dried ginger powder
- 1g (1/4 tsp) salt
- 80g (1/2 cup) raisins optional
Liquid Ingredients
- 120ml (1/2 cup) maple syrup
- 70g (5 Tbsp) Digestive Ghee melted
- 6g (1 tsp) vanilla extract

Instructions
- Preheat oven to 325 degrees F.
- Stir the oats, flour, watermelon seeds, spices and salt together in a bowl. Save the raisins until later.
- Separately, whisk together the maple syrup, melted ghee, and vanilla until completely combined. Add to the oat mixture, stirring well to coat.
- Place mixture on a parchment-lined baking sheet. Bake for 30 minutes.
- Stir and turn the granola over a couple of times with a heat-proof spatula.
- Return to oven; bake another 20-30 minutes, adding raisins, if desired, for the last 10-15 minutes of baking.
- All granola to cool completely. Store in a glass jar or a plastic sealed bag in the refrigerator.
This sounds delicious! Can I use honey instead of maple syrup?
Hello! Ayurveda recommends that we keep honey in its raw, natural state and that we not mix it with ghee in equal quantity by weight. So, when baking such as this, we stick to natural sweeteners other than honey.You can use coconut palm sugar, organic cane sugar, brown rice syrup, or brown sugar if you prefer.
