This marinade is excellent for making sweet and sour shrimp or chicken. The natural acidity of the tamarind fruit helps to tenderize the chicken, but be careful not to marinate shrimp or other seafood too long, as it will “cook” it.
The main flavor in this well-known dish comes from the tamarind. Make sure you have the highest quality organic tamarind paste for the best flavor!

- 7 TBSP tamarind paste
- 1/3 cup honey
- 2 cloves garlic
- 2 TBSP brown sugar
- 3 TBSP chili oil or avocado oil or sesame oil
- 1/2 tsp Himalayan pink salt

Instructions
- Mix all the ingredients for marinade together in a bowl. Whisk until sugar dissolves.
- Toss shrimp in marinade, cover, and set at room temperature for 30 minutes. For chicken, marinate in the fridge for 1-4 hours.
- When ready to cook, remove meat from marinade, and reserve the marinade in a small pan. Bring the reserved marinade to a simmer and simmer for at lest 5 minutes.
- Heat oil in a skillet and brown on one side of the shrimp or chicken before flipping.
- Garnish with sesame seeds, scallions, and/or cilantro.
