Serves 4
1 cup dry basmati rice
1 tablespoon Organic Grass-Fed Ghee
¼ teaspoon ground coriander
1 cup chopped asparagus
1 cup small grape tomatoes
1 small yellow bell pepper, chopped
1 jalapeño pepper, seeded and thinly sliced
1 tablespoon PRIMALOIL™
Salt and freshly ground black pepper
Prepare rice with ghee and ground coriander according to package instructions. Once rice has cooked, turn off heat, add asparagus to the top, cover and let it sit for 5 minutes. Meanwhile, place tomatoes, yellow peppers and jalapeño in a serving dish. Add rice and asparagus. Stir in PRIMALOIL™, salt and pepper.
