- 2 TBSP Italian Ghee
- 1 TBSP Garlic Ghee
- 2 large scallions (or 5-6 small scallions)
- 2 poblano peppers diced
- 6 meatballs cubed
- 2 garlic cloves
- 4 egg(s)
- 1/2 cup shredded cheese

Instructions
- Heat 2 TBSP Pure Indian Foods Italian Ghee in a cast iron pan and sauté chopped scallions, diced peppers, diced tomato, cubed meatballs, and garlic.
- In a medium bowl, eggs with 1 TBSP melted Garlic Ghee, and shredded cheese.
- Pour over vegetable mixture and heat through halfway.
- To cook top, place in oven at 525°F on broil for 5 minutes or until golden on top.
- Top with fresh avocado , salsa, chives, cilantro, red pepper flakes, Sriracha or really anything you desire. 🙂
