Whole30 Chinese Chicken and Bok Choy Soup

Ingredients
- 4 cups broth Whole30 compliant chicken
- 1 tsp Red Boat fish sauce plus more as needed
- 4 shiitake mushrooms thinly sliced
- 1 carrot(s) thinly sliced into coins
- 3 cups bok choy thinky sliced
- 2 cups chicken thighs, diced, cooked
- Himalayan pink salt
- 1/2 tsp sesame oil toasted
- 1/4 cup green onion minced

Instructions
Heat a medium size saucepan on high, and add broth and fish sauce.
Bring to a boil. Then, add mushrooms and carrot.
Reduce heat and simmer until carrots are tender, but not mushy.
Add bok choy and diced chicken and continue to simmer for about 10 minutes.
Take pan off heat and season to personal preference.
To serve, add sesame oil and green onions, then ladle into bowls.
