Brunch is more fun with this apple skillet cake made with Digestive Ghee! Skillet cakes are a quick and easy way to make breakfast feel fancy. Because the cake is mostly made with eggs, it’s rich without feeling heavy. And you can easily switch out ingredients to change the feel of the cake.
This skillet cake is made with apples and onions, but you could easily swap out the apples for sundried tomatoes, a little chopped spinach, and a handful of shredded cheese. The possibilities are endless. Use the same base recipe and use strawberries to make a strawberry cake. Try blueberries and lavender. Or bacon and mushrooms. Chicken or pork sausage and fire-roasted red peppers with gouda.

Savory Apple Skillet Cake

Instructions
Preheat your oven to 525°F on the broil setting.
Then heat in a medium cast iron skillet grassfed organic ghee on medium.
Dice onions and apples into small 1 cm cubes, and sauté in ghee until soft, about 5 minutes.
In a bowl, whisk together the eggs, milk, maple syrup, salt, cinnamon, and flour
Add Digestive Ghee to the skillet and stir.
Pour the egg mixture over the apples and onions in the skillet and leave on medium heat, bubbling gently, until it is cooked halfway through, about 3 minutes. Be careful not to burn the bottom.
Pop it in your preheated oven for another 3 or so minutes, keeping an eye on it so the top doesn't burn. Remove when the top is a beautiful golden brown.
