Baked Pumpkin with Cheese, Thyme and Sesame Seeds
This simple, versatile dish works beautifully with just about any variety of winter squash. We love the flavor of thyme but feel free to experiment with another fresh herb. Goat cheese, feta cheese or any dry cheese you love would be perfectly delicious as well.

  • 4 cups pumpkin or butternut squash peeled, seeded and cut into 1-inch cubes
  • 2 tbsp almond oil
  • goat cheese crumbled (or feta)
  • thyme fresh leaves
  • sesame seeds pan toasted
  • Himalayan pink salt

Instructions
  1. Preheat oven to 400 degrees F.
  2. Line a baking sheet with parchment paper.
  3. Toss pumpkin with almond oil, thyme and salt; transfer to baking sheet.
  4. Bake for 20-30 minutes or until tender.
  5. To serve, scatter goat cheese and toasted sesame seeds over the top
